Story
The story
The vineyards on the southern slopes of Mont Ventoux, where we produce In Fine wines, benefit from alternating hot days in summer and cooler nights, which cooler nights, which favours the full ripening of the grapes and the expression of the aromas, while preserving a sensation of lightness and freshness that can be found in the wines. In Fine wines are modern and tasty, accessible to all and for all occasions.
Location
The vineyards extend over the rolling hillsides south of Mont Ventoux, in the form of a mosaic of plots where the hand of man is everywhere present between varied market gardening, table grape vines and orchards. The vineyards are often delimited by terraces held back by low dry stone walls built by the elders.
Terroir
Two of the three soils specific to the appellation are found: red soils resulting from the degradation of limestone, and soils made of a mixture of sand and ochreous clay favourable to the production of fine and elegant wines.
The Mont Ventoux and the Dentelles de Montmirail chain protect the vineyards from the excesses of the Mistral wind, while generating cool currents that favour cooler nights and better ripeness.

In the vineyard
The vines are cultivated in an environmentally friendly manner.
Vinification
Low pressure pressing, tight settling. Cold stabilisation (+- 0 C°) on part of the wines. Fermentation in temperature-controlled vats (+-14C°).
Ageing
In a temperature-controlled tank.

Tasting notes
Pale yellow with green reflections, the nose awakens greediness with aromas of white flesh fruits and apricot in syrup supported by a beautiful mineral note. The palate has a full and tasty attack with pretty notes of white fruit (vine peach, apricot and pear). The balance is assured by a nice tension and a good length in the mouth.
Food and wine pairings
Serve as an aperitif, with a summer meal, grilled fish or shellfish, but also with soft cheese.
Recipes
Beignets de girolles persillés
Ingrédients :
400 g de girolles
50 g de farine
15 cl de lait
persil
huile de friture
sel, poivre
Préparation :
Portez à ébullition une casserole d'eau salée.
Nettoyez les champignons et plongez-les pendant 10 min dans l’eau bouillante.
Pendant ce temps, lavez le persil, essorez-le et hachez-le finement.
Dans un saladier, mélangez le lait avec la farine, du sel, du poivre et 1 c. à soupe de persil.
Égouttez les champignons, puis plongez-les dans la pâte à frire jusqu'à ce qu'ils soient bien enrobés.
Jetez-les dans la friteuse et laissez-les dorer.
Égouttez délicatement sur du papier absorbant.
Servez aussitôt.
